BBQ Chicken

I thought, while I was sitting here, I would just post about what we are having for dinner tonight.
BBQ Chicken

Ingredients
BBQ sauce, whatever kind, I like original flavor
(you might have to use more than one bottle, just enough to cover the chicken)
Apricot & Pineapple Preserves 1 jar
3-4 chicken breasts, or really any amount you want, just add more of the above ingredients

Mix BBQ sauce and Apricot & Pineapple preserves in a pan that can go in the oven.  My big soup pot can go in the oven, but I think that you could just use a cake pan, and cover it.  Then put in chicken and make sure it is covered with sauce. 
Bake @ 350 for 45 minutes or until chicken is done.
I usually just make baked potatoes to go with it, but I am sure that anything would go with it.  If you want to bake the potatoes with it just put them in at the same time, it will take a little bit longer though!

I don't know how to post on this blog but I have a spin off of Brittney's recipe!! It's S$S CK, Instead of BBQ Sauce you use Catalina Dressing and the Apricot/Pineapple Preserves. You brown cut up chicken in a skillet and then add the dressing and preserves, add enough dressing to cover chicken and then spoonful by spoonful add in the preserves and keep tasting until your satisfied!! I also sometimes add a little onion soup mix to make it not so sweet!!! Just let it simmer once everything is added for 10 minutes. I serve on white rice.
