Wheat Cinnamon Rolls

This is so scrumptious and so easy, I promise. Do you remember my wheat bread recipe I posted? Well you can use that same recipe to make super yummy cinnamon rolls. I made these the other day and took pictures as a went so I could post them along with the recipe.

2 1/2 cups of warm water
1 T yeast (heaping)
1/3 cup honey
1/3 cup oil
1 1/2 tsp salt
1/4 cup gluten flour (optional)
7-8 cups of wheat flour

-Pour the warm water and yeast into your mixer.
-Measure the oil FIRST, and then the honey in the same measuring cup (the honey slides out easier).
-Add the salt and gluten flour and mix for just a couple of seconds on low speed.
-Add about 6 cups of flour all at once and start your mixer on the low speed while it incorporates everything, and then you can put it on a slightly faster speed (no higher than 4, if it's like mine). The trick with this bread is not to dump all of the flour in right at the beginning because each time you mix a new batch it ends up taking a slightly different amount. Add flour about 1/4 cup at a time after the original 6 cups until the dough starts pulling away from the sides and the bottom.
-Once you have the right amount of flour, let it knead/mix on speeds 3 or 4 for 5 minutes.

-With a little oil on your hands and some on your mat (or countertop), roll out the dough into a rectangle.
-Spread softened butter over the entire rectangle with a butter knife. Don't be afraid of it - be somewhat generous.
-Then sprinkle brown sugar (again, BE GENEROUS!) and cinnamon so it covers all of it except for the very edge of the dough closest to you.
-Roll it up started with the furthest edge and roll towards you. Don't force it - it should just come easily.
-Get your dental floss, slide it under the dough, and pull it through the middle so you have two halves. It's easiest to start with a half at first. Cut it with the floss so each piece is about 1 to 1.5 inches thick.
-Place them on a lined baking sheet. I only sprayed mine, and I ended up with a lot of baked on sugar. Not easy to clean off!
-Let the rolls rise under a dish cloth for about 30 mins. Then ake at 350 for 25 mins.
-Allow to cool a bit and then frost or glaze (if you're serving right away you can just frost it right then and serve). I used Paula Dean's glaze recipe found here and it turned out great!

Creamy Cinnamon Squares

Or in this case, hearts...seeing how these were a Valentine's breakfast treat for my sweetie! They were super yummy!


2 cans Pillsbury crescent rolls (I use the seamless sheets)
3/4 c. white sugar
2 (8 oz. each) packages cream cheese
1 tsp. vanilla

Spread 1 crescent roll package on bottom of greased 9x13 pan.  Mix together 2 packages of cream cheese with 3/4 c. white sugar and 1 tsp. vanilla.  Spread on top of crescent roll layer.  Spread 2nd crescent roll package on top of the cream cheese mixture.  Mix 1/4 c. sugar with 1 tsp. cinnamon and sprinkle on top of 2nd crescent roll layer.  Bake at 350 for 20 minutes.  Cool for a while, then pop into the fridge until completely cold.  Cut into squares and enjoy!  (Or, in my case, cut into shapes using cookie cutters.)  Yummy!

Looking for a Christmas morning casserole?

Here's a great one!
I made this for my ward's Christmas party a couple weeks ago, and added it to the mix of 25 or so others on the serving table. But then I had so many people come up to me afterwards and say how good it was, and I've already sent the recipe out to some. So here it is - I hope you give it a try! My mom always makes that "souffle" Christmas casserole with ham and bread and cream of mushroom soup (you know the one - everyone has a slightly different version). That's tradition and all, but honestly, I think I like this one better...

WAKE-UP CASSEROLE

8 frozen hash brown patties (instead I used about half a package of frozen hash browns - the cubed kind)
4 c shredded cheddar cheese (i only used 2 - i don't know how 4 would even fit and 4 is way too much)
1 lb cubed fully cooked ham/bacon/sausage (ham is best in my opinion)
7 eggs (i used 8 just because i bought medium sized eggs instead of large, and i wanted to be sure it was enough)
1 cup milk
1/2 tsp salt
1/2 tsp ground mustard

Place hash browns in a single layer in a greased 13x9 baking dish. Sprinkle with ham and cheese. In a bowl, beat eggs, milk, salt, and mustard. Pour over ham. Cover and bake at 350 for 1 hour. Uncover; bake 15 mins longer or until edges are golden brown and knife inserted near the center comes out clean.

(I actually baked it for 45 minutes at 400, then removed the foil and did that for another 15... but only because I didn't get it in quickly enough to be ready for the party. I actually think I liked it cooked at the higher temp. It was a little crispy on the sides.)

Sour Cream Peach Waffles

Serve these babies with whipped cream, peaches and syrup on top! HEAVEN!! Sorry no pictures, we devoured them way to fast to even think about photographing the moment. :) I love the peach season!


Sour Cream Peach Waffles

1 1/2 cups flour
3 tablespoons sugar
2 teaspoons baking powder
1 1/2 teaspoons kosher salt
1/2 cup sour cream
3/4 cup plus 1 tablespoon milk
2 large eggs
1 teaspoon pure vanilla extract
1 teaspoon grated lemon zest
2 ripe peaches, chopped into small pieces. (I even got out my purree blender and mixed them up really fine.) Do whatever sounds good to you.


Sift together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the sour cream, milk, eggs, vanilla, and lemon zest. Add the wet ingredients to the dry ones, mixing only until combined.

Bust out the waffle iron, and cook them up! You could also make pancakes with this same batter. Enjoy!!!

German Pancakes

German Pancakes
Cory's family calls them Hootenannies. 
I think that is maybe how you spell them?  I am not sure.

Ingredients:
1 cup flour
1 cup milk
6 eggs
nutmeg or cinnamon
3/4 cube butter

Preheat oven to 350
Put butter in a cake pan, and melt in oven while it is preheating
Mix ingredients in a bowl with a spoon or a mixer, until moist.
When butter is melted, pour batter into pan.
Cook until edges are up really high on the sides.  It usually takes about 20 min. 
The edges will come up high, and once they are browned it is done.
Serve with syrup, or it is also really good with strawberries and whip cream!

Biscuits & Gravy

Biscuits & Gravy
Ingredients:
1 roll of sausage, I use Jimmy Dean
Flour
Milk
Cook sausage in skillet.  Add flour.  I have never measured, but if I had to guess, it would maybe be 1/2 cup?  Just add enough flour to cover sausage, it will look like a punch of chunky paste.  Then add milk.  Just add enough to make it gravy, again, I don't know how much.  It depends on however thick you want your gravy.  It will thicken as you cook it, so you may have to keep adding.  IMPORTANT:  Never add flour after you add the milk, it will just ball up and be gross.  Serve over biscuits.  I usually buy biscuits, but if I am super ambitious, here is an easy recipe!
Biscuits
Ingredients:
1/2 shortening
2 c. flour
3 tsp. baking powder
1/2 tsp. salt
3/4 c. milk
Mix together with fork or pastry cutter.  Roll out and cut.  I use a cup, or a ring for a quart jar, just however big you want your biscuits.
Bake @ 450 for 10-12 min. or until brown!  Don't over cook, or they will go hard!
Our family like to have breakfast for dinner.
