Blueberry Oatmeal Bread

Honestly, I haven't tried this yet...I found it on a website a few months ago and have been meaning to make it. Just haven't gotten around to it. Doesn't it sound yummy??

Blueberry Oatmeal Bread

- 2/3 cup packed brown sugar
- 3/4 cup milk
- 1/2 cup vegetable oil
- 2 eggs
- 2 1/4 cups flour
- 1 cup quick-cooking or old-fashioned oats
- 3 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup fresh or frozen blueberries (thawed and drained)

Heat oven to 350 degrees. Grease bottom only of 8- or 9-inch loaf pan. In large bowl, mix brown sugar, milk, oil and eggs with spoon. Stir in remaining ingredients except blueberries; beat 30 seconds. Fold in blueberries. Pour into pan. Sprinkle with additional oats if desired. Bake 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaf from pan; remove from pan to wire rack. Cool completely, about 2 hours, before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

Edible Playdough

(I promise my kid doesn't always look like simon birch, just in this picture. and I don't dress her in sweaters in June (this was taken in December)

Ok, so this isn't exactly food.. and even though Wynter really likes to eat it- it tastes pretty bad. But, that being sad it is fun to make, fun to play with, and it lasts forever!!

Kool- Aid Play dough

1 cup flour

1 cup water

1/2 cup salt

3 teaspoons cream of tarter

1 package kool- aid

1 tablespoon cooking oil

mix dry ingredients together in a sauce pan. slowly add water mixed with oil and stir over medium heat until mixture thickens to dough. turn out onto heat proof bread board or counter and knead until cool enough for children to handle. dough will be the color of the kool-aid mix and smell like kool-aid. Store in air tight container for up to SIX months!!

Bubbly Treats

(named by Braden's little sister)

1 pkg. brownie mix
1/2 c. melted butter
1 can sweetened condensed milk
1 c. butterscotch chips
1 c. chocolate chips
1 c. coconut

Mix dry brownie mix and melted butter together and press into a 9x13 pan. Sprinkle the butterscotch chips, chocolate chips, & coconut evenly over the brownie mixture. Pour the sweetened condensed milk evenly over all the ingredients. Bake at 350 until the sweetened condensed milk is light brown and bubbly (20-30 minutes).

These are super rich and oh-so-yummy! I don't even like coconut, but I love these.

No idea why this picture keeps turning up the wrong way...but oh well - you get the idea.

Chicken Alfredo Pizza

I found a recipe and it turned out YUMMY!

Crust:
1 C Warm Water
1 1/2 tsp active dry yeast
2 tsp sugar
3 C Flour
1/2 tsp salt
3 Tbsp Vegetable oil

Dissolve yeast water. Using a mixer, blend in 2 cups of flour and remaining ingredients. Mix until well-blended. Stir in remaining flour. Knead on a floured surface 3-4 min. Cover and let rest for 30 min. Punch dough down and shape into a ball. Roll out ball or stretch by hand to fit a 12" greased pizza pan. ( for crisp crust, sprinkle a little cornmeal on pan.)

Alfredo sauce

1/2 cube butter
4 oz cream cheese
1/2 Tbsp. minced garlic
1 cup of milk
1 hand full of shredded parmesan
1/8 to 1/4 garlic salt ( to taste)
(Let butter and cream cheese melt first stir constantly using a whisk, then add the remaining ingredients string constantly with whisk until sauce is thickened)

Toppings ( you can be creative and do whatever)

2/3 cup cubed chicken
2-3 roma tomatoes ( thinly sliced)
2-3 crumbled strips of bacon
mozzarella cheese
sprinkle garlic salt and pepper over toppings

Bake @ 450 for 15-20 min. Let cool and enjoy!

Next time I make it I am going to mix the chicken in with the Alfredo sauce when I put in on the crust. The chicken was a little too dry for our liking. Other than that, we loved it. I even took pictures but too lazy to download them. =)

Honey Sesame Pork and Rice Pilaf

Sorry I missed my day yesterday...I was super busy.
I found this recipe online somewhere and tried it for dinner tonight. It turned out really yummy!

Honey Sesame Pork and Rice Pilaf

- 1/2 cup soy sauce
- 2 cloves of garlic, minced
- 1 teaspoon ground ginger
- 1 Tablespoon sesame oil
- 1- 1 1/2 lb. pork tenderloin
- 1/4 cup honey
- 2 Tablespons brown sugar
- 1/4 cup sesame seeds

Combine soy sauce, garlic, ginger, and sesame oil in a large plastic bag. Add tenderloin. Marinate at least 2 hours. Combine honey and brown sugar in a shallow bowl. Remove tenderloin from marinade. Chicken Broccoli Casserole!!

Ingredients:

diced cooked chicken (probably 2 lb)
1/4 cup Butter
1/2 cup flour
1 small can chicken broth
1 can cream of chicken soup
1/2 cup mayo
broccoli flourets
Mozz Cheese
Minute rice (wheat or white)

Cook Broccoli (set aside)
cook chicken diced (set aside)

mix together butter, flour, soup, mayo

get a 9x13 pan and add broccoli to bottom (i'd probably spray with pam)
then added chicken on top, then top chicken and broccoli with sauce.

On the top sprinkle Mozz Cheese all over

Cook at 325 degrees fro about 30-35 minutes (everything will be starting to bubble)

serve over rice!

I know I suck at writing these out but this is what I have to work with. It's an extremely nummy casserole and I think having it for leftovers tastes even better.

p.s. I add a little extra soup and broth to make it cover everything!

Ice cream cups~

I made this dessert last Sunday night. It was such a hit, I thought I would share!!

I followed these instructions to make chocolate cups. Then we filled them with homemade strawberry ice cream, and topped it with shaved chocolate. Delish!!

My only insight as you pursue this endeavor is:
1. Use a bowl to melt the chocolate that doesn't get hot in the microwave. A hot bowl provokes balloon poppage. :) Or if the bowl is already hot, scrape the chocolate into a new bowl and then dip.
2. Make sure you spray each balloon with pam. That promotes easy clean up after you pop the balloon.

Winter Fruit Salad with Lemon Poppyseed Dressing

Winter Fruit Salad with Lemon Poppyseed Dressing

- 3 tablespoons white sugar
- 3 tablespoons lemon juice
- 1 teaspoon diced onion
- 1/2 teaspoon Dijon-style mustard
- 1/4 teaspoon salt
- 4 tablespoons vegetable oil
- 1 ½ teaspoons poppyseeds
- ¾ head romaine lettuce
- shredded swiss cheese
- cashews
- dried cranberries
- Apple peeled, cored, and diced
- Pear peeled, cored, and diced

In a blender or food processor, combine sugar, lemon juice, onion, mustard, and salt. Process until well blended. With machine still running add oil in a slow, steady stream until mixture is thick and smooth. Add poppy seeds and process a few seconds more to mix.

In a large serving bowl, combine the romaine lettuce, shredded swiss cheese, cashews, dried cranberries, and the cubed apple and pear. Toss to mix, then pour dressing over salad just before serving and toss to coat.

Dan and I love this salad. We always make it with our salmon that we grill. We found it on http://www.allrecipes.com/. I think these measurements are slightly small, maybe enough for 6? So it would be good for a family, but if you're making a salad to take somewhere I would double it - or you can search for it at allrecipes.com and put in how many people you want to serve and it will adjust the measurements for you, so that's nice.

Hopefully you guys aren't sick of me posting all of my recipes...but I would like to see more of yours!

German Pancakes

German Pancakes
Cory's family calls them Hootenannies.
I think that is maybe how you spell them?  I am not sure.

Ingredients:
1 cup flour
1 cup milk
6 eggs
nutmeg or cinnamon
3/4 cube butter

Preheat oven to 350
Put butter in a cake pan, and melt in oven while it is preheating
Mix ingredients in a bowl with a spoon or a mixer, until moist.
When butter is melted, pour batter into pan.
Cook until edges are up really high on the sides.  It usually takes about 20 min.
The edges will come up high, and once they are browned it is done.
Serve with syrup, or it is also really good with strawberries and whip cream!
ENJOY

Cutest Cake EVER

I was just looking at one of my favorite sites that I go to every day. Make it and Love it. There's always so much fun stuff on there! Today's post is a festive 4th of July Cake and I thought I would share. See it here.  Maybe it's not the cutest cake EVER, because I really like the ever popular fondant that everyone is doing lately, but fondant is sometihng that looks like too much work for me, so this is do-able. I LOVE the inside! I want to make one, but I won't be around for the 4th of July...kind of sad. Someone needs to make one for me since I can't...Enjoy!

Candy Coated Popcorn

1 hour | 15 min prep
SERVES 6 -8

4 quarts popped corn ( 8 TBSP uncooked kernels)
1 1/2 cups granulated sugar
1/2 cup light corn syrup
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon cream of tartar
1 teaspoon baking soda
1 teaspoon flavoring (any flavor, flavor amount can be increased as desired)
liquid food coloring (as desired)

1. Keep freshly-popped corn warm in large baking pan in 200°F oven.
2. Combine sugar, corn syrup, butter, salt and cream of tartar in medium saucepan. Bring to boil, stirring constantly. Cook to 250°F without stirring.
3.Remove from heat. After boiling action ceases, add flavoring and color. Add soda and stir in quickly but thoroughly. Pour at once while foamy over warm popcorn; mix gently to coat corn. Shape into balls or spread onto cookie sheet and break into pieces when cool.
Any flavoring will work well. For the pumpkin flavoring I add 1 t. cinnamon and 1/4 t. cloves. After it has hardened I drizzle white chocolate over it. I really like it.

Other Possibilities:
Grape – Grape Kool-Aid
Pink Lemonade – Kool-Aid
Orange Dreamsicle – orange Kool-Aid, then drizzle white melted chocolate after cooled
Always fun to mix two flavors like blue raspberry and lemonade.

Beef Sesame

I used to have a recipe for a Beef Sesame that was really good and I can't seem to find it. So I looked one up the other day because we really like it. I don't remember where it was from, but here is what I found:

- 1 lb. sirloin steak, cut into 1/8-inch strips
- 2 tablespoons sugar
- 3 tablespoohs cooking oil, divided
- 2 tablespoons soy sauce
- 1/4 teaspoon pepper
- 3 green onions, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon sesame seed

Place beef in a glass bowl. Combine sugar, 2 tablespoons oil, soy sauce, pepper, onions, garlic and sesame seeds. Pour over beef and toss to coat. Let stand 15 minutes. In skillet or wok, heat remaining oil over high heat; add beef and marinade. Stir-fry until beef is brown and has reached desired doneness. Serve immediately over rice or noodles.
It was really yummy...

(I got pictures this time! Are you proud of me? ...Even though in this picture it slightly resembles dog food, I promise it tasted good!)

The BEST sugar cookies

Hi Ladies,
I am now a part of this blog.. we have been out of town and I am so excited to post and see all of your AMAZING recipes!! I made the mistake of showing Kalen this blog, and now I have been deeemed "Worst wife ever" because you guys make awesome food ( puts my mac and cheese to shame). So, here is to new talents! The one thing that I can make good though, is cookies. I guess that is why Kalen married me. So here is to butter and sugar, enjoy!

Cookie:
1 cup butter
1 1/2 Cups sugar
2 eggs
3 tablespoons sour cream
1/2 teaspoon almond extract
1/2 teaspoon vanilla
1/2 teaspoon salt
1/4 teaspoon salt
3 1/4 cups flour
cream butter and sugar. Add eggs, sour cream, almond extract, and vanilla and mix well. Add soda, salt, and flour and mix on low just until cominded. Roll into a ball, wrap in plastic wrap and refrigerate 3 to 4 hours ( I am too impatient to do that step. I put them in the freezer for 15-20 minutes, and it has always worked fine). Roll out on floured surface and cut into shapes. Bake on ungreased cookie sheet, (I actually grease my cookie sheet so I can cook the cookies for less time, I like them really soft, and have them still come off the pan ok) at 375 degrees for 6-8 minutes (I do six), these cookies don't brown! Cook on racks.

Frosting:
1/2 Cups butter, softened but not melted
4 cups powdered sugar (about half the bag)
1/4 cups milk (or more)
1/2 teaspoon vanilla
1/2 teaspoon almond extract
pinch of salt
In mixing bowl, beat butter slowly with powdered sugar. Add milk and continue to beat. Add vnailla, almond extract and salt. If needed, add more milk to make frosting spreading consistency. Color with food coloring.

Stuffed Green Peppers with Quinoa

First thing's first--- Place 1 year old in sandbox right below kitchen window. Ahh.... now it's time to make dinner!

Ingredients:
  • Green Peppers
  • 1 lb Ground Beef
  • 1 medium sized white/yellow onion
  • 1/2 cup rice
  • 1/2 cup quinoa (I got a bag at Costco. You can get it at sunflower, whole foods, etc..)
  • 1 can petite diced tomatoes
  • 1 can tomato sauce
  • 1 large carrot (I grated mine up in small shreds)
  • 1 stalk celery (dice in small chunks)
  • Season to taste!
  • Shredded Cheddar Cheese
1. Cut off the tops of your peppers and clean out the centers. Blanch them in boiling water for 5 minutes. (this will speed up the cooking process!)
2. Boil 1/2 cup rice, with 1/2 cup quinoa with 2 cups of water. Bring to a boil and cook on low for 15 minutes.
3. Cut up one medium onion and cook with ground beef.
4. Add shredded carrots, diced celery, tomato sauce and petite tomatoes.
5. Mix in rice and quinoa. Season with garlic, salt, pepper, taco seasoning, whatever you like!

6. Slice the green peppers in half. Stuff them, and sprinkle cheese on top.
7. Warm them through in the oven for 10-15 minutes until cheese is melted.
*This makes a lot of stuffing! I used what I could and still had 1/2 of it left. I froze the second half and we'll eat this again in 2 weeks. Only this time all I have to do is blanch the peppers and warm them through. Hooray.

Label List

Hi Everyone,
So I've labeled all of the posts that weren't already and there is now a list along the side to make it easier to find the type of recipe you're looking for! So now each time you post, just make sure to label it at the bottom of the post in the field that says "labels." If you have any questions let me know! Thanks.

Biscuits from Red Lobster!

I missed my day yesterday so here is my post. It's just a few hours late... I decided to do a side dish with all of these wonderful dinner meals that have been posted!

Red Lobster Biscuits
2 cups bisquick
2/3 cup milk
1/2 cup shredded cheddar cheese
1/4 tsp. garlic powder
1/2 tsp. crushed parsley
1/4 cup melted butter or margarine

Mix bisquick, milk, and cheddar cheese well. Drop by heaping spoonfuls onto greased cookie sheet. Bake at 450 degrees for 10-12 minutes. Remove from oven and brush with remaining ingredients. Serve warm!

Oreo Cookies

I was making these this morning, and thought you might already have this recipe, but I love it!  It is super easy and super yummy!

Oreo Cookies

2 Boxes Devil's Food Cake Mix
4 Eggs
1 C. Shortning

Mix ingredients in a bowl with your hands.  It becomes to thick to do with a mixer.  Mix until it becomes a dark almost black color, and well moistened.  Roll into balls and place on cookie sheet.
Bake at 350 for 8-9 min.
They will start to crack on top, and that is when they are done.  Don't over cook, they will go really hard.  Ice with whatever icing.  My girls love colored icing.
I know that it isn't even close to Halloween, but we like to make spiders out of them.  Ice them with green, purple, or orange icing, and then buy the pull apart licorice, and put them on as legs!  They are fun and super easy!

Bacon, Cheese, & Potato Chowder

3 c. milk (I use part half 'n' half & part milk because we have skim and I wanted it creamy)
2 c. frozen southern-style hashbrowns
1 can cream of potato soup
1 c. cheddar cheese
1/2 pkg. bacon, crisply cooked, drained, & crumbled
1/4 c. thinly sliced green onions

Mix milk & soup in large saucepan. Stir in hashbrowns. Bring to boil on high heat, stirring occasionally. Reduce heat to medium/low. Simmer 10 minutes, stirring frequently. Salt & pepper to taste. Ladle into soup bowls. Top evenly with cheese, bacon, & onions.

This is a super easy meal that tastes really yummy! It's one of our new favorites. I actually 1 1/2 the recipe so Braden has plenty of leftovers.

Meet Quinoa, (keen-wah) my new friend!!

,
Meet QUINOA!~! It seems like the latest and greatest thing people are talking about these days. I thought I'd share what I've learned. The picture above is quinoa cooked (top right) and uncooked (bottom left). It is an AWESOME source of protein.

Quinoa: 16.2 %
Rice: 7.5 %
Millet: 9.9 %
Barley: 8.2 %
Wheat: 14 %

Mr. Wikipedia put it this way, "this crop has become highly appreciated for its nutritional value, as its protein content is very high (12%–18%). Unlike wheat or rice (which are low in lysine), quinoa contains a balanced set of essential amino acids for humans, making it an unusually complete protein source among plant foods. It is a good source of dietary fiber and phosphorus and is high in magnesium and iron. Quinoa is gluten-free and considered easy to digest."

Our celiac friends are going to love us for this!!!

One quote I found says,
"While no single food can supply all of the essential life-sustaining nutrients, it (quinoa) comes as close as any other in the vegetable or animal kingdoms."

Sounds thrilling, doesn't it? Why aren't we eating this every day? Well, some people are! My mother in law has been known to throw it in a lot of different recipes. Chili, for example was delicious with it in! At sunday dinner this week, she even used quinoa in frog eye salad instead of the cini de pepi it normally calls for.

Below I've got pictures of a quinoa salad, and a berry quinao. Wouldn't that be delicious for breakfast?  I'm posting on Thursday, so get ready for a yummy quinoa recipe! I hope you enjoy getting to know my delicious new friend.

Easy Stove-Top Stuffing Chicken Bake

Well it's not my turn to make dinner tonight, but I'm planning on making this sometime this week. My sister-in-law made this one night and I really liked it and told her I had to get the recipe. Well guess what? It's on the back of the Stove Top Stuffing Box (chicken flavored). Only I don't put in the mixed vegetables that it calls for. I like it better without them and then I just serve it with a salad or some other kind of vegetable on the side.

- 1 package Stove Top Stuffing mix for chicken
- 1 1/2 lb. boneless, skinless chicken breasts, cut into 1 inch pieces
- 1 can cream of chicken soup
- 1/3 cup sour cream

Prepare stuffing mix as directed on package; set aside. Mix chicken, soup, and sour cream in a 13 X 9 inch baking dish; top with prepared stuffing. Bake 30 minutes at 350 degrees.

*On the box it says to bake it at 400 degrees, but I think that's a little high. So maybe cook it for a bit longer than 30 minutes at 350 instead, or just until the chicken is cooked through. Also, I've only made this once myself and when I baked it for 30 minutes at 400 the stuffing got a little too crispy so I would maybe wait and add the stuffing halfway through or something. Hope you like it! It's really yummy and really easy!

Chicken Alfredo Pizza

I want to make Chicken Alfredo Pizza next week and have been searching for a recipe. Does anyone have one?

Thanks!

Calzones

I know it's not my regular day to post but this is kind of a fun and easy recipe that my sister-in-law made last night...

Use frozen Rhodes Loaves. Set them out and let them thaw and rise. Roll them out with a rolling pin as flat as they will go. Along each side lengthwise, cut about 1 inch slits. Spread marinara sauce and add cheese, pepperoni, (or whatever pizza toppings you like! I was also thinking this might be good as a Chicken Alfredo or BBQ Chicken Calzone...I'll have to try it.). Then tuck in the top and bottom and pull and cross each slit over one by one until it is all enclosed. Bake at 350 for 15 minutes or until golden brown.

I wish I would have taken a picture of it because the first time she explained it to me I didn't quite get how to cross over the slits and I wasn't sure what it was supposed to look like. If anyone is interested in this let me know and the next time I make them I will make sure to take a picture.

Zesty Slow Cooker BBQ Chicken

This sounds similar to Brittney's and Haylee's with a slight twist. I made it last night for the first time and it was so easy and yummy

6 frozen boneless chicken breast (I only used 2 large chicken breast for 2 people)
1 (12 oz) bottle BBQ sauce ( I used about 9 oz)
1/2 C Italian salad dressing
1/4 C brown sugar
2 TBS Worcestershire sauce

Put chicken in your crock pot. Mix the rest of the ingredients in a bowl and pour over the chicken. Cover and cook 3-4 hours on high or 6-8 hours on low.

Once it was cooked I took out the chicken and shredded it into small pieces. I then returned it to the crock pot to mix it with the sauce. I made baked potatoes and served it right on top of the potatoes.

There were lots of left overs too!

P.S. thanks for letting me be a part of this blog even though I'm not on the regular schedule. :)

Sweet and Sour Chicken/ Healthier Chocolate Cake

So I put a twist to Brittney's Monday post on her BBQ Ck in the comments but I will just re-do it as my Friday post!!

4 boneless skinless Chicken Breast
Catalina Dressing
Apricot/pineapple Preserves
Lipton Onion Soup Mix (optional)

Heat a skillet and chop chicken to bite size pieces, cook chicken until brown (I like mine kind of crispy brown so I add a little bit of olive oil to cook in)

Once chicken is cooked add catalina dressing until chicken is covered

(put stove to simmer)

Then spoonful by spoonful add in the preserves keep tasting once mixed together to see if you need more preserves.

You can then sprinkle some of the onion soup mix in if you don't want is as sweet, but don't use all of it or it can get salty.

*just make sure you are tasting it as you go so you like the consistency of sweetness.

Let it simmer for 10 minutes

I like to add it to rice or you could make some fried rice to go with it.

CAKE

One box of Chocolate cake mix
1 can of black beans

put the mix in the bowl (do not add any of the eggs or oil or water)

rinse the black beans in a strainer and rinse out the can they came with

put the black beans in a blender with one can of water (make sure the can is clean so you don't get any of the black bean juice.

once everything is blended add beans to powdered cake mix and stir. It will be pretty thick but that's how it is supposed to be.

Add to your cake pan (make sure you spray it first) then cook to what the cake box says for what pan you are using.

It's almost brownie like texture so it is good with ice cream.

Biscuits & Gravy

Biscuits & Gravy
Ingredients:
1 roll of sausage, I use Jimmy Dean
Flour
Milk
Cook sausage in skillet.  Add flour.  I have never measured, but if I had to guess, it would maybe be 1/2 cup?  Just add enough flour to cover sausage, it will look like a punch of chunky paste.  Then add milk.  Just add enough to make it gravy, again, I don't know how much.  It depends on however thick you want your gravy.  It will thicken as you cook it, so you may have to keep adding.  IMPORTANT:  Never add flour after you add the milk, it will just ball up and be gross.  Serve over biscuits.  I usually buy biscuits, but if I am super ambitious, here is an easy recipe!
Biscuits
Ingredients:
1/2 shortening
2 c. flour
3 tsp. baking powder
1/2 tsp. salt
3/4 c. milk
Mix together with fork or pastry cutter.  Roll out and cut.  I use a cup, or a ring for a quart jar, just however big you want your biscuits.
Bake @ 450 for 10-12 min. or until brown!  Don't over cook, or they will go hard!
Our family like to have breakfast for dinner.
I hope you enjoy!

Homemade Pot Pie

I LOVE this recipe. My grandma used to make it a lot. Hope you enjoy!

Ingredients
2 pie shells (Pillsbury has 2 in a box that you just unroll and they're ready to use!)
beef - can buy beef from the store that is already cut into cubes
frozen cauliflower/broccoli florets - I add both
baby carrots
frozen peas
chopped onion - however much you want to add for flavor
1 can cream of chicken or cream of mushroom soup
1 potato - cut into bite size chunks
seasonings to taste - I use rosemary, thyme, oregano, basil and sometimes add garlic salt or minced garlic.

Mix the above ingredients together in a separate bowl. Put one pie shell in the bottom of a deep dish pie pan, fold the edges up over the tip of the pan. Put the mixed ingredients in the pie shell and spread evenly. Put the 2nd pie shell over the top of the pie and pinch the edges together. Cut a few slits in the top to allow steam to escape. Cover edges of pie crust with aluminum foil - this will prevent your crust edges from burning. Cook at 425 degrees for 45 minutes. Remove aluminum foil and cook for about 10 more minutes.
(If you have questions on how to cook the crust, check the Pillsbury crust box. That's the time and temp you will use).
