Winter Fruit Salad with Lemon Poppyseed Dressing
- 3 tablespoons white sugar
- 3 tablespoons lemon juice
- 1 teaspoon diced onion
- 1/2 teaspoon Dijon-style mustard
- 1/4 teaspoon salt
- 4 tablespoons vegetable oil
- 1 ½ teaspoons poppyseeds
- ¾ head romaine lettuce
- shredded swiss cheese
- cashews
- dried cranberries
- Apple peeled, cored, and diced
- Pear peeled, cored, and diced
In a blender or food processor, combine sugar, lemon juice, onion, mustard, and salt. Process until well blended. With machine still running add oil in a slow, steady stream until mixture is thick and smooth. Add poppy seeds and process a few seconds more to mix.
In a large serving bowl, combine the romaine lettuce, shredded swiss cheese, cashews, dried cranberries, and the cubed apple and pear. Toss to mix, then pour dressing over salad just before serving and toss to coat.
Dan and I love this salad. We always make it with our salmon that we grill. We found it on http://www.allrecipes.com/. I think these measurements are slightly small, maybe enough for 6? So it would be good for a family, but if you're making a salad to take somewhere I would double it - or you can search for it at allrecipes.com and put in how many people you want to serve and it will adjust the measurements for you, so that's nice.
