Easy Stove-Top Stuffing Chicken Bake

Well it's not my turn to make dinner tonight, but I'm planning on making this sometime this week. My sister-in-law made this one night and I really liked it and told her I had to get the recipe. Well guess what? It's on the back of the Stove Top Stuffing Box (chicken flavored). Only I don't put in the mixed vegetables that it calls for. I like it better without them and then I just serve it with a salad or some other kind of vegetable on the side.

- 1 package Stove Top Stuffing mix for chicken
- 1 1/2 lb. boneless, skinless chicken breasts, cut into 1 inch pieces
- 1 can cream of chicken soup
- 1/3 cup sour cream

Prepare stuffing mix as directed on package; set aside. Mix chicken, soup, and sour cream in a 13 X 9 inch baking dish; top with prepared stuffing. Bake 30 minutes at 350 degrees.

*On the box it says to bake it at 400 degrees, but I think that's a little high. So maybe cook it for a bit longer than 30 minutes at 350 instead, or just until the chicken is cooked through. Also, I've only made this once myself and when I baked it for 30 minutes at 400 the stuffing got a little too crispy so I would maybe wait and add the stuffing halfway through or something. Hope you like it! It's really yummy and really easy!

As a little variation, I use milk instead of sour cream, and I top the stuffing with cheese. I actually don't cut up the chicken either - but just use tenders and cook at 350 for about 35 minutes.
