Stuffed Green Peppers with Quinoa

First thing's first--- Place 1 year old in sandbox right below kitchen window. Ahh.... now it's time to make dinner!

Ingredients:
  • Green Peppers
  • 1 lb Ground Beef
  • 1 medium sized white/yellow onion
  • 1/2 cup rice
  • 1/2 cup quinoa (I got a bag at Costco. You can get it at sunflower, whole foods, etc..)
  • 1 can petite diced tomatoes
  • 1 can tomato sauce
  • 1 large carrot (I grated mine up in small shreds)
  • 1 stalk celery (dice in small chunks)
  • Season to taste!
  • Shredded Cheddar Cheese
1. Cut off the tops of your peppers and clean out the centers. Blanch them in boiling water for 5 minutes. (this will speed up the cooking process!)
2. Boil 1/2 cup rice, with 1/2 cup quinoa with 2 cups of water. Bring to a boil and cook on low for 15 minutes.
3. Cut up one medium onion and cook with ground beef.
4. Add shredded carrots, diced celery, tomato sauce and petite tomatoes.
5. Mix in rice and quinoa. Season with garlic, salt, pepper, taco seasoning, whatever you like!

6. Slice the green peppers in half. Stuff them, and sprinkle cheese on top.
7. Warm them through in the oven for 10-15 minutes until cheese is melted.
*This makes a lot of stuffing! I used what I could and still had 1/2 of it left. I froze the second half and we'll eat this again in 2 weeks. Only this time all I have to do is blanch the peppers and warm them through. Hooray.

That looks SO GOOD! One problem...I don't like green peppers. Do you think the stuffing would be good on tortillas or something?

I love the pictures. I have been wanting to add them to my posts but keep forgetting. And I love the sand box. I want to get one for Amelia!
